Cucumber Bruschetta

Gluten Free? Vegetarian? Low Carb? Bring this appetizer to any party and enjoy a healthy but delicious treat!


Replace the gluten and carb laden baguette with an English Cucumber sliced on an angle to take on the shape of the traditional bread. Make your bruschetta by finely dicing fresh Roma tomatoes (I used 6), dice about 1/4 c or more of fresh basil leaves, sprinkle with olive oil (i use very little, maybe 1 Tbs, but depends on how you like it) Sprinkle with sea salt and refrigerate until ready to scoop out onto sliced cucumbers. Reduce about 1/4-1/2c balsamic vinegar by half in a small saucepan over medium heat and drizzle on top just before serving.
