Keeping It Simple


This is a super simple vegan meal. I am all about simple short cuts and making cooking easier and less time consuming. This balanced meal was super easy and completely vegetarian. This is roasted delicata squash, my favorite veggie this time of year. Just cut in half, scoop out seeds, cut into "smiles" and roast at 400 for about 40 min (flipping once). The other mixture is great for breakfast or lunch. I simply sautéed onion, red pepper, chopped mushroom and added bacon flavored tempeh (vegetarian protein). For breakfast the next day I just reheated the "hash" and cracked 2 eggs over it to increase protein and deliciousness! Another time saving tip: repurposing your meals and getting 2-3 meals out of one recipe! Keep it simple and you won't feel like you have to spend hours every day in the kitchen!
