Ode to the Zucchini! This powerful little vegetable packs a punch loaded with nutrients but not fat and calories. I add this to a ton of things because you can get extra veggies without many calories. An entire zucchini is only about 29 calories. I use my Spiralizer and make "zoodles" frequently. I combine them with soups and stews, I roast zucchini with just a small sprinkle of parmesan cheese, I add it to stir fry. It's all delicious.
