This meal is great for the entire family! I make this like a buffet and let people throw in whatever they prefer. This one has seasoned chicken, baby spinach and cauliflower rice in the bottom of the bowl. Then I added fresh salsa, avocado, black beans, sautéed bell pepper and onion and a fresh squeeze of lime. You don't even need a dressing once you mix it all up. Then for my bowl I did all the same except substituted grilled tofu for the chicken. So everyone is happy! For the chicken I used a spice blend I make with cumin, chili powder, salt and pepper, and paprika (and a tiny but of cayenne if you like spicy!) A real crowd pleaser!
