This was literally just a last minute throw it all together concoction that was so delicious. I make pounds of zucchini noodles every week and throw them into everything! This time I added whatever I had in the fridge - compari tomatoes, mushrooms, onion and a little Mediterranean flare with sun dried tomatoes and roasted red peppers. I added a little aged balsamic and it was an amazing flavor combination with very few calories. In fact the entire bowl was about 150 calories. If you used actual pasta it would have been about 350 calories and about 50g of carbs. Zucchini is also loaded with phytonutrients, vitamins and minerals you can't get out of white pasta. WIN!
