I used to think salads consisted of lettuce, cucumber, tomato, carrots and dressing. BORING! I have discovered a world of different ways to make a salad as well as homemade dressing full of flavor but not fat! Start with a base of any kind of greens or mix of greens you like. These are loaded with nutrients and barely any calories so load up that bowl or plate. My general rule is to add a grain (this is red quinoa) but you can add farro, barley, brown rice, whatever you like. Add a bean or legume (chickpeas above) but you could use black beans, lentils, small white navy beans, unlimited choices. This adds protein to your salad. I like to add a fruit, a starchy vegetable and maybe some other mild veggies like cucumber or celery. So in this salad, I added my favorite sweet potato and a little cucumber and apple. I made my own dressing with no added fats and ate it up! I'll post dressing recipes for you later. So try a new fancy salad and get rid of your old boring salads! You'll start loving them again!
